Hello coffee enthusiasts,
Today I would like to spotlight our newest pastry item, the Lemon Square. Some of you may be thinking, why would Wade focus on one random item for a whole blog post? The reality is that I love lemon pastries. For that matter, I actually love all things lemon. If that’s not reason enough, the Lemon Square specifically is something that we here at BCB have been trying to perfect for some time, but never felt confident enough in our product to serve it to our customers. After countless efforts and testing, Laurel is finally pleased with the result, and we all think our customers will be too.
So what is a Lemon Square? Well, to put it in the simplest terms possible from my non-pastry chef perspective, it’s a pastry with a pie-like crust, and a lemon custard topping. The lemon custard is sweet and tart, while the crust is flaky and soft. Since Laurel’s pie-crust recipe is award winning, she really didn’t need to alter it much to get the flaky result she was looking for. The lemon custard on the other hand was a bit trickier.
It is very difficult to get the proper consistency for a custard like the one in our Lemon Squares. Once she finally got the custard right, it was just a matter of getting the right balance between the sweetness and the tartness. As anyone who’s tried their hand at baking with lemon knows, a little goes a long way, causing this seemingly easy task to take a lot longer than anticipated. It’s very exciting to achieve the accomplished feeling of finally perfecting a pastry, so Laurel is very proud of this one.
Overall I would say our Lemon Squares are definitely worth a try. I hope that you guys appreciate the effort that goes into each one of our pastries, but specifically the creation process.
